Moroccan Chicken Drumsticks
Packed with flavour, and a great source of protein, these Moroccan Chicken Drumsticks won’t disappoint!

WHAT YOU NEED:

2 tbsp. olive oil

8 chicken drumsticks

1 onion, halved, sliced

2 cloves garlic, crushed

Half cup (15g) parsley, chopped

2.5 oz. (70g) green olives

Quarter lemon (juice only)

1 tsp. flour
-
1 tsp. turmeric
-
Pinch of saffron
-
1 tbsp. paprika
-
Half tsp. ground cumin
WHAT YOU NEED TO DO:
1. Heat the oil in a large pan, and fry the chicken drumsticks on all sides until golden.
2. Add the onion and garlic. Season with salt and pepper and cook for another 3-4 minutes.
3. Pour in 240ml of boiling water and add the spices. Mix well and bring to the boil.
4. Add half of the chopped parsley, mix, cover the pan with a lid, reduce the heat and simmer for 30 minutes. In the meantime, turn the meat over halfway through the cooking time.
5. Finally, add the green olives and lemon juice, and mix well.
6. Mix the flour with 2 tbsp. of water, and then with 2 tbsp. of the sauce from the pan. Pour this mixture into the pan and mix well.
7. Cook uncovered for another 10-15 minutes until the sauce thickens and the meat is tender.
8. Sprinkle with the remaining chopped parsley and serve.
Serving suggestion : potatoes, rice
