Roasted Sweet Potatoes with Hummus & Pesto

These Roasted Sweet Potatoes with Hummus and Pesto are great for a tasty snack or light lunch. 

Serves : 4   Prep : 10 mins    Cook : 35 mins

WHAT YOU NEED:

  • 1 lb. (450g) sweet potatoes
  • 2 tsp. ground coriander
  • 2 tsp. ground cumin
  • 1 tsp. hot paprika or chilli flakes
  • 2 tbsp. olive oil
  • 10 oz. (300g) hummus
  • 2 tbsp. green pesto

WHAT YOU NEED TO DO:

1. Prepare the hummus (store-bought or follow the recipe that can be found on the ‘snacks’ page)

2. Heat the oven to 375F (190C). Wash the potatoes and cut lengthwise into wedges-season with salt, pepper, and spices (coriander, cumin, paprika). 

3. Then grease with olive oil and place in an ovenproof dish or on a baking tray. Bake for about 30-35 minutes (or until soft).

4. Serve the roasted potatoes on a bed of hummus and pesto.
